Happy St. Patrick’s Day! With a name like Erin, how could I resist something at least vaguley resembling a traditional Irish recipe? Although I tend not to like soda bread, this recipe from Big Red Kitchen has changed my mind. It is moist, flavorful, and has a good crust. Best of all, it takes about [...]

This is another slightly adapted Cooking Light recipe. I really enoyed it, and although my husband was dubious upon seeing that can of creamed corn in a bowl, he came around when it came out of the oven. It was easy, flavorful, and tasted like the corn pudding that you get at Chevy’s.
1 c. Mexican [...]

Now, these will never top the wonderful confection that graced this site in my early days, but they literally took about 30 seconds to prepare and were done in 20 minutes. This makes them fantastic in my book.
1 sheet frozen puff pastry, thawed
1/2 c. sugar
2 Tbs melted butter
2 Tbs cinnamon
Unfold puff pastry, and spread melted [...]

I know this is a little bit late for the Superbowl, but I thought I’d post it anyway since it was such a huge success here. I’m not a fan of blue cheese, so I went with ranch, but you could easily change this to your liking. I really threw it together as I went [...]

These were a great way to start Sunday morning. I found this recipe in my Better Homes and Gardens New Cookbook, Bridal Edition, which I actually hadn’t cracked open since I received it as a gift over a year ago. Shame on me. I had to modify the recipe a little bit to make it [...]

I had seen this recipe a bunch of times on A Year of Crock Potting, so I finally decided to try it when I had some time this weekend. I originally was going to make breadsticks in a can, but was lazy and was already at Target where they didn’t have any. So instead, I [...]

This was Christmas breakfast, and it was quite good! Although there were complaints that I didn’t make cinnamon rolls, I found that this (which takes all of 5 minutes plus soaking/baking time) to make fit the bill nicely, and cooked in the amount of time it took everyone to open presents. Sounds good to me!

This is a Pioneer Woman Thanksgiving. Instead of our usual Pillsbury crescent rolls, I made some of these fantastic dinner rolls. I halved the recipe – 8 cups of flour in the original just sounded like it would make wayyyy too many for our modest gathering.
2 c. milk
1/2 c. sugar
1/2 c. vegetable oil
Scald the mixture [...]
