Indian Crock Pot Chicken

I love the crock pot.  I love it even more when I just leave a note for my husband sitting on his desk and I come home to a meal that is done.  I garnished this with a little cilantro, but probably should not have, as the flavor of the cilantro was quite strong in comparison to other flavors in the dish.  Good all around, and actually a recipe that fits the “easy eats” part of this website, ha.

  • 2 boneless, skinless chicken breasts, frozen
  • 1 can diced tomatoes, drained
  • 1 diced onion
  • 1/2 tsp ginger
  • 2 cloves garlic, minced (or pressed)
  • 1/2 tsp. ground coriander
  • 1/4 tsp. cayenne pepper
  • 1 tsp garam masala (the wonder spice! = Indian food)
  • 1/2 c. plain yogurt

Place chicken into crockpot.  Mix tomatoes and everything but the yogurt together and pour over chicken.  Cook on low for 7 hours.  Add yogurt and stir.  Cook another 30 minutes – 1 hour (until chicken shreds easily with a fork.)  Serve over rice or with naan (which I can never find anywhere and am too lazy to make.)
