Super Easy Crock Pot Chicken with Tomatoes
This has been a favorite of mine for a long time. Whenever people ask about “easy dinner” this is the first thing that comes to mind. It’s easy to increase the servings, and requires zero time to get ready. Seriously. No pictures tonight – I was too hungry! Maybe next time… The main dish is totally healthy for you – no added fat at all. The chicken gets so tender it shreds, a really nice texture.
- Frozen chicken breasts (boneless, bone in, whatever you have) I used 2 tonight
- 1 can Italian stewed tomatoes for every 2 chicken breasts
That’s it.
Put the frozen chicken (it’s easiest to use that Renyolds release wrap and plop it into the freezer when you get it home from the store. Then, unwrap it and put it frozen into the crockpot. Don’t thaw it!) Put your stewed tomatoes in there. (Make sure that they at least partially cover the chicken – I just dump mine on top and let them fall where they will.) Turn it on low for about 8 hours. That’s it! I served mine tonight with some packaged creamy garlic shells, but they’d be great over alfredo noodles or even just plain noodles in a pinch (or egg noodles!)
