Momma’s Birthday Cake

Posted on March 19th, 2009, by Erin

This is my mommy’s birthday cake.  I guess technically it was both of my parents’ birthday cakes, since their birthdays are only a few days apart, but it was made with my mom in mind.  She has this thing about mice.  Not real  mice, mind you (I think she’d scream and run away if she [...]

Chocolate and Bailey’s Cupcakes

Posted on March 17th, 2009, by Erin

I whipped these up tonight for dessert but couldn’t resist sampling one before dessert time rolled around.  I also couldn’t resist eating any icing that may have found its way out of the icing bowl and on to my finger.  The original recipe yeilded 16 cupcakes – I halved to make 8.  The halved recipe [...]

Irish Soda Bread

Posted on March 17th, 2009, by Erin

Happy St. Patrick’s Day!  With a name like Erin, how could I resist something at least vaguley resembling a traditional Irish recipe?  Although I tend not to like soda bread, this recipe from Big Red Kitchen has changed my mind.  It is moist, flavorful, and has a good crust.  Best of all, it takes about [...]

Moosewood Fudge Brownies

Posted on March 13th, 2009, by Erin

Still working out a few details on the new appearance of the site.  Hope you like how it’s looking so far!
Although the title of these is fudge brownies, even following the “make it as fudgey as possible” instructions leaves me with something resembling mousse when it goes into the pan, and tasting a little bit [...]

Coffee Cake Muffins

Posted on February 1st, 2009, by Erin

These were a great way to start Sunday morning.  I found this recipe in my Better Homes and Gardens New Cookbook, Bridal Edition, which I actually hadn’t cracked open since I received it as a gift over a year ago.  Shame on me.  I had to modify the recipe a little bit to make it [...]

Pioneer Woman’s Rum Cake

Posted on December 28th, 2008, by Erin

So when I was about 13 my parents cruelly abandoned my brothers and I and went on a cruise.  (I don’t really harbor resentment, it’s just funnier this way, Mom.)  And they brought back these tiny Tortuga rum cakes that I ate so happily because I was not supposed to have alcohol and I was [...]

Dinner Rolls

Posted on November 28th, 2008, by Erin

This is a Pioneer Woman Thanksgiving.  Instead of our usual Pillsbury crescent rolls, I made some of these fantastic dinner rolls.  I halved the recipe – 8 cups of flour in the original just sounded like it would make wayyyy too many for our modest gathering.

2 c. milk
1/2 c. sugar
1/2 c. vegetable oil

Scald the mixture [...]

Happy Birthday, Blog!

Posted on November 6th, 2008, by Erin

I would love to say that I made this cake in honor of my blog’s birthday today, but really, I made it two weeks ago and didn’t post it.  I’m in love with Dorie Greenspan’s Baking: From My Home to Yours cookbook, and I announced the other day, much to my husband’s delight, that I’m [...]

Fresh Ginger and Chocolate Gingerbread

Posted on November 2nd, 2008, by Erin

This recipe was taken, without any adaptations, from Dorie Greenspan’s “Baking: From My Home to Yours.”  I had my doubts about chocolate and gingerbread – they seemed very much contradictory to me when I started, but I was intrigued.  This is the best gingerbread I’ve ever had.  Cakelike, moist, dense, and rich with flavor.  I [...]

“Aussie Meat Pies”

Posted on August 20th, 2008, by Erin

Another recipe from Rachael Ray, although modifiedd because I don’t eat beef.  These were reallly fast – about 15 minutes from start to finish.  They really lived up to their description in the cookbook – “souped up sloppy joes.”  I was dubious about the ketchup on top, but it was really good, especially with the [...]
