Chicken Stuffed with Goat Cheese and Sundried Tomatoes

Posted on March 23rd, 2009, by Erin

Now, depending on who you are, the picture down there might not look so appetizing.  But I promise this was one of the most well received dinners at my house in a long time, and I quickly put it into the category of “company dinners.”  Not that we ever have company for dinner (and if [...]

Chicken Tamale Casserole

Posted on February 16th, 2009, by Erin

This is another slightly adapted Cooking Light recipe.  I really enoyed it, and although my husband was dubious upon seeing that can of creamed corn in a bowl, he came around when it came out of the oven.  It was easy, flavorful, and tasted like the corn pudding that you get at Chevy’s.

1 c. Mexican [...]

Creamy Mexican Chicken in a Crock Pot

Posted on February 10th, 2009, by Erin

I don’t have much else to say other than the title.  I’m in love with my crock pot, and it remains my favorite way to be lazy with dinner.  This is really a “dump it in the pot” kind of meal, although I souped it up a bit in the end with some additional seasoning.  [...]

Crock Pot Hoisin Drumsticks

Posted on January 20th, 2009, by Erin

I don’t know if I’ve sung the praises of the crock pot enogh on this site, but if I have not, I really should start.  You dump a bunch of things in, and then 6 hours later, you have dinner.   This recipe was especially tasty.  Although the taste wasn’t strong, it was flavorful.  And sometimes [...]

Sweet and Sour Chicken

Posted on January 17th, 2009, by Erin

Alrighty, I’m back.  Sorry for being out of comission there for awhile.  Hope I didn’t lose too many people!  To make up for being gone so long, I’m going to post for the next four days in a row.  Maybe even more, if I start cooking again this weekend.

So, this recipe is a modified Cooking [...]

Creamy Italian Chicken

Posted on December 4th, 2008, by Erin

This was by far one of the tastiest pasta dishes I’ve had in a long time.  Alas, there is no way to make it pretty – it’s white, with chicken, and pasta.  I guess I could have used some parsley to jazz up the picture, but I’m just keeping it real, ya know.  I left [...]

Scallion Chicken Noodles

Posted on December 3rd, 2008, by Erin

This dinner came together in the amount of time it took the pasta to finish cooking.  It was super simple, and really delicious!

1 lb boneless chicken breasts
1 Tbs lime juice
1/2 lb linguine, cooked to package directions
1 c. scallions, chopped
2 cloves garlic, chopped
1 Tbs grated fresh ginger
2 Tbs soy sauce
1 Tbs sesame oil
Generous pinch of sugar
1/4 [...]

Chicken Teryaki Stirfry

Posted on November 11th, 2008, by Erin

I originally planned on marinating this chicken only in teryaki sauce, only to discover that we had about 1/4 c. left in the jar.  (Unsponsored plug, by the way, for Soy Vay, the best teryaki sauce I have ever had.)  So I had to improvise.  I marinated the chicken in a hodgepodge of what I [...]

Chicken in Tarragon Cream Sauce

Posted on November 9th, 2008, by Erin

I really had a hankering for some potatoes, and wanted to make them the way I like them best – baked with a little coarse sea salt and creme fraiche.  And then I thought “well that’s a super French thing, let’s make tarragon chicken, because just the word tarragon reminds me of France.”  I made [...]

Indian Crock Pot Chicken

Posted on November 1st, 2008, by Erin

I love the crock pot.  I love it even more when I just leave a note for my husband sitting on his desk and I come home to a meal that is done.  I garnished this with a little cilantro, but probably should not have, as the flavor of the cilantro was quite strong in [...]
