Spicy Shrimp and Fettuccine

Posted on April 9th, 2009, by Erin

This was a simply great, quick dish adapted from Cooking Light.  If you catch shrimp on sale, it’s practically frugal as well…  The idea for tonight was fire, sun, warmth and brightness.  This fit the bill quite well.

1/2 lb fettuccine, cooked to package directions and drained (really, start cooking it as soon as you start [...]

Chicken Stuffed with Goat Cheese and Sundried Tomatoes

Posted on March 23rd, 2009, by Erin

Now, depending on who you are, the picture down there might not look so appetizing.  But I promise this was one of the most well received dinners at my house in a long time, and I quickly put it into the category of “company dinners.”  Not that we ever have company for dinner (and if [...]

Tuna Noodle Casserole

Posted on March 21st, 2009, by Erin

Sometimes, you just want some comfort food.  After a few weeks of tossing around making another box of Tuna Helper (oh, thrilling meal that it is) I decided to make this instead.  It was easy, it was satisfying, and more importantly, it had noodles and cheese in it.

6 oz. egg noodles, cooked to package directions
1 [...]

Crock Pot Lasagna

Posted on March 11th, 2009, by Erin

Aaaand we’re back.  I’m working on a whole series of posts to make up for the almost-month I’ve been gone.  First up is another crock pot recipe, since those always seem to generate the most feedback.  This one is for crock pot lasagna, which has been one of my favorites since my mom got the [...]

Baked Spaghetti Carbonara

Posted on January 19th, 2009, by Erin

This recipe comes from Debbie at A Woman of a Certain Age.  I found this on my TWD blogroll… not sweets at all, but a healthy way to enjoy spaghetti carbonara! I would probably add some more seasoning, especially salt, to this next time, as I found everything but the crust (with the Parmesan cheese) [...]

Pierogies with Bacon and Sauteed Onions

Posted on December 22nd, 2008, by Erin

The Polish get such a bad rap.  How can you crack on a people that combines pasta with mashed potatoes?  Yeesh.  Throw some bacon in there, and you have serious comfort food, too.  This was great, and it took about the time to make that it took the pierogies to boil.  This is tagged as [...]

Creamy Italian Chicken

Posted on December 4th, 2008, by Erin

This was by far one of the tastiest pasta dishes I’ve had in a long time.  Alas, there is no way to make it pretty – it’s white, with chicken, and pasta.  I guess I could have used some parsley to jazz up the picture, but I’m just keeping it real, ya know.  I left [...]

Scallion Chicken Noodles

Posted on December 3rd, 2008, by Erin

This dinner came together in the amount of time it took the pasta to finish cooking.  It was super simple, and really delicious!

1/2 lb linguine, cooked to package directions
1 c. scallions, chopped
2 cloves garlic, chopped
1 Tbs grated fresh ginger
2 Tbs soy sauce
1 Tbs sesame oil
Generous pinch of sugar
1/4 [...]

Chicken Cacciatori

Posted on July 31st, 2008, by Erin

I’m pretty sure this isn’t a traditional cacciatori recipe.  I’m fairly cofident that those involve wine, peppers, mushrooms, and other things that are not in here.  However, that’s what it was always called when I was growing up, and so it shall remain.  It’s a quick and simple meal, and (shh don’t tell mom) I’ve [...]

Sausage, Peppers, and Orzo

Posted on July 8th, 2008, by Erin

This week, we’re feeling the hit in the wallet, so I dreamed up a series of meals that would cost us next to nothing by exploring my cabinet and freezer.  I also discovered Thursday Night Smackdown, whose writer hosts a series of cheap meals every Monday.  This one sounded especially appealing, since all I had [...]
